William (Will) Scott has always had a fascination with coffee from his time spent in Kenya in the late 1960’s when he was awoken each morning to the aroma of freshly brewed coffee grown locally. Having then worked in the coffee and tea industry for many years, he was able to understand more of the secrets of coffee growing and roasting. Will has also supplied quality coffee to local people and visitors to his coffee shop, Aldwinckles, in Market Harborough, and to local businesses in the area.
The idea of becoming a micro/ artisan roaster has been a two-year journey of visiting large commercial roasters and then spending time talking to and roasting with like-minded roasters. Then followed a trip to Colombia in February to visit different regions, meeting farmers and cooperatives where Will was able to observe the process from the planting of seeds to the milled parchments that eventually became the green coffee bean.
Will sources his green beans from a direct importer that he has have known for some years as they have the experience and network to provide him with the best quality beans from the coffee belt of the world and, in many cases, know the farms and farmers who grow the coffee.
His current range of beans includes some from Rain Forest Alliance certified farms which helps to ensure sustainable livelihoods for the farmer and his workers and to protect ecosystems and the wildlife in those areas. Having bought a small micro roaster, Will has now started roasting with the aim of retaining the main characteristics of the single-origin bean yet enhancing them with delicate roasting. As he is hand roasting in small batches, Will can control the final roast condition.
In most cases, the coffee will be to a medium roast, just after the first crack, which allows the full range of taste, aroma and flavour to be enjoyed by the coffee drinker. Will recommends that the coffee is supplied as roasted whole beans so that the coffee lover can grind their own coffee as required and in the correct quantity for each brew, which helps to retain the freshness.
